I don't work in a camera-friendly environment, which sucks for you :) It frustrates me too that I can't show where I spend most of my time.
I've been working with the woman who handles the hotel's retail pastry shop, which means whole cakes, individual entremets, and lots and lots of decorating. I hate decorating. Haaaate it. I'm good at serving tasty, but ugly, food. I know I'm supposed to be applying "balance" and "asymmetry" for the most pleasing design, but these concepts are crayons in a four y/o's hand with the shakes. When I make it work, I like to have clean lines and minimal, modern enhancements. Any small flourishes must be tidy. I am diametrically opposed to the "pile on top fruit and other things that are not components" school of decorating, but since I have to keep with the theme they have going here, Cakes by Delia Deetz has been birthed. Oh god. Whole strawberries huddle next to fans of sliced apple and kiwi, with looming swoops of dark and white chocolate curls, and a line of raspberries dotted halfway around the border. All of this on a green pistachio mousse cake that has dried coconut pressed around the sides. I'm so bad at this, you guys, and I'm so constrained. I can see my coworker watching me and every now and then she'll "fix" part of the mess, usually with a strawberry, and it will look better :p
Is this Khanh or somebody else? You sound so disgustipated. I would be too. I don't have tolerance for fru fru, period, no one should.

Would have loved to see some of your handiwork even if you are not particularly proud of it.
I am also opposed to dry coconuts on anything unless if it is for the sake of adding fibers to your diet, still there are better / purer sources of fiber. It generally has the effect of ruining texture and taste.
ReplyDeleteI don't know anything about decorating, but would not different cultures have different ways of adding flurish to their creations. So you add the decorations that go with the type of culture? No?
